I used to like anime in the early 00's as a teenager, typical stuff like Evangelion, Trigun, Dragon Ball Z, Gundam Wing, FMA:B, Cowboy Bebop, Naruto / Shippuuden and what have you, but nowadays in my late twenties I don't like anime as much anymore ( still like the old ones ). Back then anime was a refreshing alternative to a lot of the western shows airing at the time, anime seemed a bit more mature in how they handled certain elements, but saying "Anime X is more mature than ( for example ) Jim Button because it has Y" kind of loses its meaning as one grows older.
I do not like "moe", "loli" or "fan service" and I find the culture of grown men obsessing over fictional characters rather disturbing, to say the least, so I won't touch anime that dabble too far into that territory.
So what do I watch?
The only anime I'm currently actively watching is Black Clover, although the animation is trash tier, there's a certain charm to its campy setup, typical shounen stuff of having a couple of people screaming "cool" sounding attacks and having flashy things flying across the screen. The main heroine is an annoying "tsundere" character though, so that's a major demerit to the series.
Up until recently I watched Dragon Ball Super, mainly because I liked Dragon Ball and Dragon Ball Z as a kid and it was a fun trip down memory lane, even if there were some "potholes" along the way.
I watched Naruto Shippuuden up until the end because I started Naruto back when it was around episode 18, also tried Boruto, but there's too much filler obfuscating the main plot, so I'll go back to that series when it's finished and sift out the plot episodes.
I watched Garo: Vanishing Line last year because it had a refreshing lack of fan service and the coloring and animation ( cgi not included ) were reminiscent of older anime.
A few years ago I watched Noragami, a fun setting and setup, even if it eventually turned into people doing the typical shounen stuff described above.
When I feel like watching some Japanese media I mostly just try some "J-drama", because there is a very small chance of the above named moe, loli and fan service crap popping up.
Some recommendations for these;
Rookies , 1 season + movie
Adaptation of a manga, it's a show about a high school group of boys and their baseball team, at the start of the series they're a bunch delinquents and over the course of the season they try and get their baseball team together again. It's a real good feel-good series, definitely a must watch, even it it can be a bit tropey at times.
Legal High , 2 seasons
A show about a selfish lawyer that is only interested in making money but ends up doing the right thing most of the time. A bit like Phoenix Wright, but different. It might sound a bit cliche, but the show has some good humor and is just fun to watch.
Nobunaga Concerto , 1 season + movie
Adaptation of a light novel, it's a show about a kid that accidentally travels through time and ends up in the warring era Japan where he switches places with the warlord Oda Nobunaga. There's a lot of humor to be found here. There's also an anime adaptation, but aside from some pretty shots, it's abysmal.
Life , 1 season
A show about a girl that gets bullied in high school, a heartwarming story.
35 Year Old Highschool Student , 1 season
A bit more wacky than the above mentioned series, it's about a lady who is 35 years old and flunked out of high school back when she was younger, she now goes back to high school to finish up her last year and get her high school diploma. It deals with some of the usual high school tropes like bullying and such.
