For me, in chronological order, Ducktales, Darkwing Duck, Pokemon (Generation 1 and a bit of 2), Dragonball (and Z) (don't judge me), and Batman Beyond. I think Trigun fits in there too.

Actually, Batman Beyond may still be very watchable as an adult, and the Pokemon cartoon is rather childish to watch nowadays of course, but it's also got heart and a major sense of adventure that I won't deny it of.
