Is there a specific genre name for "singer + piano and strings?"

My guess would've been orchestral perhaps.
Wikipedia seems to suggest piano/symphonic rock so they might be a good starting point

Wikipedia seems to think most of them would be classified as "Symphonic Metal" but also uses "Gothic Rock", I would say they have elements of both so I'd suggest looking into both genres if you're looking for new things to listen to.

Yeah, they're all symphonic rock/metal bands, but the songs in the OP are totally different than the rest of their songs.

I think I figured it out though. Apparently, in modern music, those type of songs are referred to as "ballads"
