You will need at very least a spare burner phone of some kind. I would advise just using an old smartphone you have laying around. (But not too old. It still needs to be able to interface with modern Google servers. And also, if the old phone has GrapheneOS on it, it's not going to work, so also keep that in mind.) You will also need access to basic public wifi of some kind. Finally, although it is not needed, I would advise also getting a second SIM card to remove the upload limit on YouTube and also enable 2FA on your account.

First, make a new user account on your phone if you haven't done so yet, (Not needed if you already wiped the phone.) Clear the cache and storage from the Play Store and Google Play Services Then turn off mobile data and turn on wifi on the phone. Go to your public wifi spot of choice and open the Play Store app. You'll be prompted to sign in. Just hit "Next" until it sees there's no account to log in to and then click "Create Account". Then go through the process. Once it's done, go to your account settings and add 2FA to your account if you so desire, and then boom! You're done. Make sure to turn off wifi now so there will be no internet connection to the phone. Just common calling and texting. This allows 2FA login while not exposing your home IP address later.

Technically, you can do this without any SIM card. It's advised though that you do this so you can upload videos longer than 15 minutes and also defeat possible theft of session tokens.

As to SIM registration, this is not really a "Hide from the Government" guide. If it was, then I would recommend not using a Google account at all. If there is such SIM registration in your country, you can still use an anonymous service such as TextreSIM and then use the open-source Aegis authenticator app to lock the account down instead of a phone number.

If you're not that paranoid though, you can perhaps register the SIM and then cancel it when you've used it to unlock the video limit. This would stop Google from knowing what your phone number is although they'd still probably have the number on record for government authorities to access. All in all though, there are many ways to go about this.

This no longer works, because your Youtube account is connected to your Google account, it is all one and the same. I made my channel in 2011 long before any of these things and it's been years since they basically made everything just be your one and only google login. The only minor exception is that you can make a "brand account" to keep your Youtube separate from your Google account, basically to keep your personal name separate from the Youtube channel and give that channel a custom name. But everything falls under the purview of the same Google account.

Sort of. My account is old (2007) and I haven't given them my identity, but were I to change my various accounts emails to "de-google", I could "relinquish" my gmail/youtube account if I were so inclined.
